Mayonnaise snapper, or at least the version I made, is a fried snapper with a mayonnaise sauce. Using a wet dry wet dry batter mix, the fish were thrown into the frier whole, as is the Chinese and best way, and served with a mayonnaise sauce and a tartar sauce for those who are more stereotypical in their ways.

The snapper were individually dipped into salted milk then flower, then egg wash and bread crumbs. Below is a picture of the fish covered in the salted milk and flower, about to go into the egg wash and bread crumbs.

After covered with breadcrumbs, it was into the fryer. I waited until the fish were a nice golden brown to remove them, and served them with mayonnaise sauce and tartar sauce on the side. Below is a picture of a finished fried snapper!
