Duchess Cream Soup

Duchess cream soup is made from onions, celery, carrots, and cheeses amongst other ingredients. It is a hearty cream soup, that seemed very winter-y and could be served warm or cold. The process of making the soup was not very time or energy consuming, and could be made for a simple dinner anytime you felt you needed some warmth. Below is a picture of the ingredients for the soup.

Step one of this process was to cube all ingredients, so that they could be melted more easily into the soup. Below is a picture of the cubes vegetables.

The vegetables were cooked down for a minute, before starting the base of the soup. 1/4 cup of flower was added to melted butter, then chicken broth, milk and water were added in succession. After these were all bubbling together, the veggies were added in, then the cheese. It was kept on the stove for the rest of the cooking, then served after the appetizers.
